- 1 Tbsp. olive oil
- 1 tsp. minced garlic (1 large clove)
- 1 carton (8.25 oz.) Kitchen Basics® Original Chicken Stock
- 3/4 cup uncooked penne pasta (2 oz.)
- 1 cup bite-sized broccoli flowerets
- 1 lemon (1 Tbsp. lemon juice and 1 tsp. lemon zest)
- 1 Tbsp. softened goat cheese
- Pinch red pepper flakes

Satisfy your personal comfort food craving with this delicately creamy, fresh tasting pasta dish inspired by Italian pasta al limone. A one-pot pasta prep method means little clean up too. Pasta cooks in just the right amount of chicken stock enhanced with garlic and broccoli. This simple but spectacular lemony weeknight pasta meal for one can be doubled to serve two, see Tip.
Prep & Cook Instructions
- Heat oil in an 8-inch skillet over medium heat. Add garlic and cook 30 seconds, stirring constantly.
- Add stock and penne; cover and bring to a boil. Reduce heat to medium; cover and cook 10 minutes. Stir in broccoli; cover and cook 1 to 2 minutes until pasta is al dente.
- Remove from heat; DO NOT DRAIN. Stir in lemon juice and zest, goat cheese and red pepper flakes; let stand one minute for pasta to absorb any remaining liquid.
TIP: To serve 2 people, prepare recipe as directed except double all ingredients, use a 10-inch skillet and cook uncovered 13 to 15 minutes before adding broccoli in Step 2.
